Learn an ancient culinary craft
Gain a unique, hands-on introduction to one of China’s most iconic culinary traditions — noodle-making. Reflecting centuries of culinary heritage, this engaging activity offers an authentic insight into the artistry behind la mian, China’s renowned hand-pulled noodle technique.
Guided by experienced chefs in Shanghai, participants discover the intricate process of twisting, stretching and folding dough into long, delicate strands. The craft demands precision, rhythm and a refined technique, all of which are explored during the practical, two-hour session.
Participants learn how to pull and loop the dough, gaining a true appreciation for the words la, to pull or stretch the mian noodle. All materials, ingredients and individual workstations are provided and the session concludes with participants enjoying the noodles they have made in the class.
The programme is ideally suited to small, intimate groups of up to 10 participants. For larger groups, customised programmes can be arranged.
